Shrimp Cascade

1 lb. raw shrimp, shelled & save shells (13-15 ct)
3 C. Chicken stock, simmer shells in stock with garlic, Bay seasoning, Bay leaf, Cilantro (a lot), salt & white pepper, lemon juice & champagne vinegar
2 C. raw rice. Cook & use hot or cold
Strain shells out of stock and add shrimp. Cook til pink, 3-5 mins.
Serves 2-4, broth and shrimp over rice
